So much is going on!!

Hi there everyone!  I wonder if there even are followers.  I am not your typical blog writer.  Mainly because I am busy as hell and well, I don't think about it much.  If I could download my inner dialogue it might help.  However, I digress.  Things her at NessAlla are quite amazing.  We moved into the 16oz size and it seems to fit us just right.  Kombucha is flying off the shelves all over and we expect it to be a busy summer.  As for the size of our kitchen, well that's another matter.  We are using up every available inch of space and will soon outgrow our beloved kitchen below the Weary Traveler.  Yes, we can still rock out while brewing, but no longer can we hoola hoop a nifty little Kombucha jig.  Instead, we must wiggle a little and hope we don't run into a mountain of boxed bottles or crate wall of tea.  We used to have several work spaces that are now dominated by beautiful SCOBY condos.  Our once few hours of work has multiplied into long days of work. 

 

NessAlla now has our first OFFICIAL apprentice, Addie Greenwood!  She is a rock star of a worker, showing up on'time and working like a horse right along side Alla and I.  It is pretty fun when we are all in the kitchen laughing away and discussing next steps.  Having the 16oz around has made life a bit more tedious as we do everythin by hand.  Bottling, sealing, and stickering are jobs that become devided among us, as well as brewing and delivering.

 

Yet another Bottle washer has quit.  We love the rturnable bottles, but alas, we do EVERYTHING by hand and no one sticks around for that job very long.  It is tedious work.  It takes about 5 hours for a full 3 weeks of bottles, but if done weekly prolly wouldn't be that bad.

 

Which brings me to another point.  We are going to be adding another apprentice as Addie will be graduating and moving to a more lucrative position.  Soon we will have a new apprentice and I have decided that th initial job of apprentice will be bottle washing. We can't get rid of the 64oz.  We will do it as long as we can.  If we can make enough money we may be able to buy an actual washer....or rent one...we'll see what happens.

 

Well I must go now.  I hope to write again soon of more of our adventures, such as going to Milwaukee to pick up 6,000 bottles, what it's like to clean up a gallon of spilled booch, and what happens when I personally can't have my own bottle because we're sold out.

we started a kombucha company in SF, (housekombucha.com) and i met alla when she was visiting through a mutual friend. its great to hear how hard you two are working. its very inspiring and i can relate to the stress and excitement of having a growing business.  your bottles are very attractive and your flavors sound delish.  keep up the great work! i hope to be blogging myself sometime soon :)
