The cocktail is a ritual and an art. Just because it’s dry January doesn’t mean you need to miss out on this ritual. Our booch makes a terrific spiritless base for mocktails. Take this twist on a Raspberry Lime Rickey. Mix it up with a little intention and start your first weekend of the year feeling a bit more than less.
RECIPE
Bittersweet Reflections
Makes 2 highballs
Crushed ice to fill 2/3 of each glass
1/4 c of muddled raspberries or raspberry purée
8 oz Raspberry @Nessalla Kombucha
2 oz fresh lime juice
8-12 oz of tonic water
6 frozen Raspberries
Muddle Raspberries (or use a strained purée if you don’t love seeds). And spoon a heaping tablespoon into a glass 2/3 filled with ice. Pour lime juice and kombucha over the ice and top off with tonic water. Stir together and float a few frozen raspberries on top.
RITUAL
Reflections are wisdom. The flip of the calendar is a natural time to take stock of what stays and what needs to go. Remember that it’s a both/and kind of world. Take a sip and savor the bitter and the sweet. Is your glass half empty or half full? You decide.

Mulled Berry Sangria
2 cans Berry Sangria NessAlla

5 whole cloves
Sliced orange for garnish
* Simmer 2 cinnamon sticks and 5 whole cloves in 1.5 cups of water for 10 minutes then let cool (can be done ahead)
* Sieve out spices and pour infusion to a punch bowl or a carafe and add orange juice
* Chill mulled juice in the fridge for up to 1 hour or overnight in a pitcher.

* Serve over ice. Garnish with sliced oranges.

Cider & Hops
1/2 cup apple cider
1/2 cup NessAlla Citrus Hops
2 tsp sugar
1/2 tsp cinnamon
Maple syrup
Sliced apples
1. Stir together the apple cider and Citrus Hops.
2. Combine the sugar and cinnamon, then spread the mixture out onto a small plate. Moisten the rim of your serving glasses by rubbing them with a small amount of maple syrup. Then invert the glasses over the sugar-cinnamon mixture, pressing down gently to coat.
3. Add fresh ice to your prepared glasses. Then divide the cocktail between the two glasses. Garnish with apple slices and serve immediately.

'Tis the season for snowy days, mulled wine, and festive tunes (at least around here it is).
We love pouring some kombucha into our mulled wine to keep it just a little less naughty (and a lot more interesting).
Here, we combined a can of Berry Sangria and a bottle of red wine to a large saucepan (plus a sliced orange, a few anise pods and some cinnamon sticks) before very gently simmering until warm.

December isn't as busy of a time for NessAlla as it is for so many of our small business friends with storefronts and holidays sales at the centers of their universes.
For us, this time of the year is relatively quiet, focused on planning and refining for the year ahead. Here is a snapshot in time of our work life lately. This is the R&D station inside our production facility where the team experiments and plays, dreaming up new flavors for the future.
Did you know you can add kombucha to salad dressings for a little extra sweet, tangy punch full of probiotics?
We whipped up a vinaigrette with our Elderberry Healer just to show you how simple it is. Experiment with any of our kombucha flavors and pairing them with different salad toppings and ingredients.
Spicy Elderberry Healer Vinaigrette is made by combining a small, minced shallot with 2 tablespoons red wine vinegar, 6 tablespoons olive oil, 1/4 cup kombucha, 1 teaspoon stoneground mustard, 1/2 teaspoon salt, 1/2 teaspoon red pepper flakes and some freshly ground black pepper together and shaking or whisking until combined. You could use less red pepper flakes if you don't want the heat.
We used this on a salad with roasted beets, red onions, spiced candied nuts and cheddar crisps. Enjoy something a little healthier on your December tables this year!

It's the last Friday before Thanksgiving (!?!?!) and we've got one last Friday mocktail recipe to inspire your holiday season. The Honey Berry Kombucha Smash combines muddled blueberries and honey with our raspberry kombucha and mint for a simple, beautiful, sweet treat for your table.
To make, muddle 1/4 cup blueberries with a tablespoon of local honey. It will get a little sticky and that's great! Add in some ice and top with our raspberry kombucha. Swirl to blend it all together. Wipe a mint leaf around the rim of the glass and then throw a fresh mint sprig into the glass.

We got a new wrap for our canned booch and it actually needs to be removed before recycling. Here's a little demo of how much easy it is to recycle our cans.
We find it so important to think about the end life of our products, materials and packaging and we love using two of the most simple to process recyclables: glass and aluminum!
